Gently press out the juice and seeds. Sprinkle the halves lightly with salt and pepper.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1 to 2 cloves mashed garlic</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>3 T. minced shallots or green onions</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>4 T. minced fresh basil and parsley</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/8 t. thyme</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/4 t. salt</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Big pinch of pepper</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/4 C. olive oil</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/2 C. crumbs from fresh white bread with body</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>A shallow, oiled roasting pan just large enough to hold the tomatoes easily in one layer</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Blend all the ingredients above in a mixing bowl. Correct seasoning. Fill each tomato half with a spoonful or two of the mixture. Sprinkle with a few drops of olive oil. Arrange the tomatoes in the roasting pan; do not crowd them. In their June 2010 issue they shared recipes from restaurants in Santa Fe. This <a href="http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1988571">salmon</a> inspired by a dinner at Amavi appealed to my taste buds. Based on this meal, if I ever make it out to Santa Fe, Amavi will be on my list of places to visit.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>So, it's obvious that I enjoyed this, I love chorizo and Sous Chef grilled the fish to perfection. I was nervous about how the children would react to this. Fish, spinach, and spice, the usual complaint causing suspects were present. But to my surprise, they liked it! Alex loved it, I had to give up some of mine so he could have seconds. So the search was on for a perfect recipe.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>None of my trusted resources had a specific Key Lime Cupcake recipe, I had to improvise. I found this recipe for <a href="http://www.marthastewart.com/recipe/lemon-meringue-cupcakes">Lemon Meringue Cupcakes</a>. I used only the cake part of the recipe and replaced the lemon zest and juice with key lime zest and juice. I tested one when they came out of the oven to determine how limey the frosting should be. The cake had a nice mild lime flavor, so I didn't have to hold back on the <a href="http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1879937">frosting</a>.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>I had toyed with the idea of doing a graham cracker crust on the bottom of the cupcakes, but instead decided to sprinkle the crumbs on top. Three out of four of my household loved this. Dylan didn't like the tomatoes cooked. He is really hard to please these days!</div><div><br /></div><div>Quick-Roasted Cherry Tomato Sauce with Spaghetti</div><div>Serves 6</div><div>Cooking Light, June 2010</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>4 quarts water</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1 T. kosher salt</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>12 oz. uncooked spaghetti</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>2 pints cherry tomatoes</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>3 T. extra-virgin olive oil, divided</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1 T. red wine vinegar</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/2 t. kosher salt</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/8 t. crushed red pepper</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/4 C. chopped or torn fresh basil leaves</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>1/4 C. chopped fresh flat leaf parsley</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>3/4 C. (3 oz.) crumbled semisoft goat cheese</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Preheat oven to 450°</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Bring 4 quarts water to a boil in a large Dutch oven. Add 1 tablespoon salt and spaghetti to boiling water; cook 10 minutes or until spaghetti is al dente. Drain spaghetti in a colander over a bowl, reserving 1/2 cup cooking water. Return spaghetti to pan; set aside, keep warm.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>While spaghetti cooks, combine tomatoes, 1 tablespoon olive oil, vinegar, 1/2 teaspoon of salt, and pepper on a jelly roll pan, tossing well to coat. Bake tomato mixture at 450° for 10 minutes or until tomatoes are soft and lightly charred in places.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Add tomatoes and any tomato juice to spaghetti in Dutch oven. Add 1/4 cup reserved cooking water to jelly roll pan, scraping pan to loosen browned bits; carefully pour water mixture and remaining 2 tablespoons oil into spaghetti mixture. Place Dutch oven over medium heat. Add remaining reserved cooking water, 2 tablespoons at a time, until spaghetti mixture is moist, tossing frequently. Stir in basil and parsley. Sprinkle with cheese. Chicken, salmon, and steak come to mind. I usually indulge in a fish that is not readily available to me at the market, rack of lamb, or my absolute favorite, duck breasts with crispy, fatty, succulent skin.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>After spotting beautiful fresh cherries at the grocery store I found this <a href="http://www.epicurious.com/recipes/food/views/Seared-Duck-Breast-with-Cherries-and-Port-Sauce-353376">recipe</a> and decided it was time to tackle the duck at home. Harris Teeter sells <a href="http://www.culverduck.com/cart/item.asp?item=38&cid=62&yl=62&nosearch=true&pgnum=1&p0=">Culver duck breasts</a>, they are nice and reasonably priced.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>As for cooking the duck in my kitchen, it could not have been easier or messier. The fatty skin that I love so much makes quite a greasy disaster area on and around the stove top, but we could forget about that until we were finished eating.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>The duck turned out well, the boys liked it. Surprisingly, Alex, who can sit and eat bowls full of fresh cherries, didn't like the sauce. He says he didn't like the cherries cooked or the shallots. I have also made it for dinner guests, as it is one of my favorite summer meals. Stir in the cream, thyme, 1 t. of salt, and 1/8 t. of pepper. Reduce the heat to medium and cook, stirring often, until thickened, 1 to 2 minutes. Remove the skillet from the heat and stir in the spinach until wilted. Transfer to a bowl and cover with foil to keep warm. Season the salmon fillets all over with salt and pepper. Deb of Smitten Kitchen and most of the commenters felt the biscuits were breakfast fare, I immediately wanted to pair them with thinly sliced grilled steak and Dijon mustard.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>I had planned on flank steak until I spotted the flat iron steak right next to it in the grocery store. Flat iron steak is thin like flank steak, but a lot less fatty. I marinated the meat in a trusty McCormick garlic and herb marinade and Sous Chef grilled it to perfection.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>The biscuits were very easy to mix up and baked quickly. Hot out of the oven they were delicious. I made a little sandwich out of mine with the steak and mustard. My husband thought the blue cheese was a wee strong, the boys agreed. The next morning I had one for breakfast and realized they were correct. I will probably halve the cheese if I make these again.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Everyone loved the steak. I especially loved it with the mustard. A few weeks ago I was listening to a cooking show on the radio and a chef recommended <a href="http://www.maille.us/pages/product.aspx?pid=9">Maille Dijon Mustard</a>. I found some and it is fabulous. First I tried it on a ham sandwich and then with the steak, I'm hooked. The recipe says there will be enough batter for 3 8-inch round pans or 2 8-inch square pans, I used 2 9-inch rounds and though they baked for a bit longer, they turned out nicely. The height of the cake was perfect. For the frosting, I made an incredibly decadent <a href="http://www.marthastewart.com/recipe/swiss-meringue-buttercream-cupcake-book">Swiss Meringue Buttercream</a>. I was slightly intimidated by this frosting, tempering and whipping up egg whites usually causes me to look at other recipes. But I went for it and it was pretty easy. The finished product is a rich, buttery, delicious frosting that is really easy to work with and a perfect companion to a moist and dense chocolate cake. </div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>The birthday boy loved his cake, that of course is what's most important. I knew the instant I saw the picture in the magazine that I had to try it! I'm so glad I did, not only was it delicious but so quick and easy. I served some roasted potatoes on the side. Chicken, cheese, and tortillas, maybe not a huge step out of the box, but onions, garlic, and pepper jack help. I made one slight change, I used half cheddar and half pepper jack. While in the grocery store, Dylan saw me pick up the peppery cheese and insisted that quesadillas were made with cheddar, so we reached a compromise.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Dylan, Daddy, and I all thought these were great. I would prefer a little more heat, sliced jalapeños would be nice, but it was Kid's Choice. Alex, on the other hand told me he didn't like them. I had torn the page out and added it to my great big folder of recipes, but never prepared it until last Thursday night. I'm sure glad I finally got around to it. I've only had it twice before, both time from jars. One was good the other not so good. Once I started looking through recipes I realized there was no reason, ever, to eat Puttanesca sauce from a jar, it is quick and easy to make at home.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>This sauce is bold and spicy. All the flavor comes from things I love that the kids hate, crushed red pepper, Kalamata olives, capers, and anchovies. Hubby and I really loved it. I used Perciatelli noodles, long tubular pasta that is like very thick Spaghetti. When the game was over, we had to come up with something quick for dinner that we could pick up at the grocery store on the way home.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space: pre; "> </span>We decided to fire up the grill and cook some steaks. I love rib eyes marinated in <a href="http://www.mccormick.com/Products/GrillMates/Marinades/Grill-Mates-Montreal-Steak-Marinade.aspx">McCormick's Montreal Steak Marinade</a>. It's easy to mix up and the meat only has to marinate for 15 minutes. In the mean time we chopped up some carrots, zucchini, yellow squash, and asparagus and tossed them in olive oil and seasoned with salt and pepper. Everything cooked on the grill at the same time. Sous Chef finally got to use this <a href="http://www.surlatable.com/product/kitchen+%26+bar+tools/outdoor+grilling/grilling+tools/perforated+stainless-steel+grill+wok,+8%26%2334-.do">handy grilling basket</a> that he got for Christmas to cook the veggies.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space: pre; "> </span>The boy's loved the steak.
